and we read Dr. Jason Fung

Hallberg says if it is "no-fat" or "low-fat" don't buy it.  We can get skim milk (0% fat), 2% fat milk or full fat (4%).  That 4% makes a big difference in satiation. A glass of that milk is quite filling.  At the same time, I wondered about the alerting effect of caffeine: does milk in coffee lessen that effect?  While looking that question up, I found advice against drinking coffee black. I have been drinking it black for 40 years or so, but the advice said that straight coffee stimulates extra stomach acid and can lead to indigestion and acid reflux.

I have been experiencing more such problems lately.  At the same time, I heard of more esophagus/stomach sphincter problems.  I decided that coffee with full-fat milk is the thing for me. I do seem to have had less reflux with it and 4% milk tastes delicious to me, in coffee or straight. Lynn feels that the taste is not so good and sticks with 2%.

Fung is a physician and supports intermittent fasting, low carb and higher fat.  He has good books and YouTube videos about weight loss and lowering or completely getting rid of diabetes.  It seems to me that the psychological and mood benefits of fasting are strong enough that older people are going to be taking up the practice of fasting more and more.  Skipping a meal or two comes naturally to people with less energy expenditure and lowered appetites.

Both of these people and others emphasize that eating fat does not directly translate into more fat blockages in arteries and veins.  That fat comes from processes in the body and not from what gets swallowed and sent to the stomach. Body types differ but for many, it appears that high carbs, especially processed foods high in rapidly digested carbs as in sugar, flour goods, and potatoes can easily deliver more energy to the body than it can use.  The body is conservative and stores that extra energy as fat and overweight leads to various health problems.

Here we are in the Dairy State so it is fitting to have 0%, 2% and 4% milk on hand.
